Delightfully sweet, smoky, and wonderfully messy, these saucy Miami ribs are a must-have for summer grilling sessions. To enhance the flavor, it is recommended to marinate the ribs overnight before grilling them over high heat and coating them in a delectable barbecue sauce crafted from tamarind sauce, brown sugar, and Scotch bonnet pepper for a perfect blend of sweet and spicy. This dish is so irresistible that you won’t be able to resist reaching for more and stocking up on napkins.
Ingredients
Miami ribs
- 1.8 kg Miami (flanken) beef ribs
- 3 tbsp brown sugar
- 2 tbsp roughly chopped thyme sprigs
- 1 tbsp garlic powder
- 1 Scotch bonnet pepper, stemmed, seeded and roughly chopped
- ¼ cup soy sauce
- 2 tbsp Maggi liquid seasoning
- 1 tbsp Jamaican jerk seasoning
- 1 tbsp whole allspice berries
- 1 tsp freshly cracked black pepper
- 2 tbsp tamarind sauce
- Neutral oil or non-stick spray
Tamarind barbecue glaze
- ¼ cup brown sugar
- ¼ cup ketchup
- 2 tbsp white vinegar
- 1 tbsp jerk seasoning
- 2 tbsp Maggi liquid seasoning
- 2 tbsp tamarind sauce
- 1 tbsp soy sauce
- 2-3 thyme sprigs
- 1 Scotch bonnet pepper, stemmed, seeded and quartered
- 1 tsp whole allspice berries
Preparation
Combine the Miami ribs and all the marinade ingredients in a large bowl, ensuring they are evenly coated. Refrigerate the mixture for a minimum of 3 hours or overnight.
When it’s time to cook, mix all the glaze ingredients in a small saucepan over medium heat. Let it simmer, stirring occasionally, until it becomes glossy and slightly thick, typically taking 8 to 10 minutes. Strain the glaze into a large heatproof bowl, reserving half for later use.
Prepare the grill on high heat and lightly oil or use non-stick spray. Lay the marinated ribs flat on the grill, cover, and grill until they are deeply charred with crispy edges, approximately 3 to 4 minutes per side.
Immediately transfer the hot ribs to the bowl with the glaze and toss them until completely coated.
Serve promptly with the reserved glaze on the side.
