Shianna Smart, co-owner of Trails End Buffalo Stix in Gull Lake, Saskatchewan, initially doubted the legitimacy of an email from NASA but was thrilled to discover that Canadian astronaut Joshua Kutryk had chosen their bison jerky for the upcoming NASA-SpaceX mission to the International Space Station. This selection process involved approval from both the Canadian Space Agency (CSA) and NASA.
Previously, Canadian astronaut Chris Hadfield had enjoyed the same Saskatchewan bison jerky sticks in space, sparking excitement for Smart. The space-bound jerky not only serves as a unique snack for astronauts but also aims to showcase its quality for everyday consumption, such as kids’ lunches, sports activities, and travel.
Natalie Hirsch from the Canadian Space Agency mentioned that while NASA provides most of the food for astronauts, they can customize a portion of their meals. Canadian options are also included, emphasizing the importance of meeting astronauts’ preferences and dietary requirements.
The selected food items for space missions must meet specific criteria, including an 18-month shelf life, space-compatible packaging, and minimal crumbs. Local support plays a vital role in the success of small businesses like Trails End Buffalo Stix, as emphasized by Nolan Langer from the Saskatchewan Food Industry Development Centre.
Canadian products sent to space extend beyond bison jerky, with items like maple syrup from Ontario and Quebec and salmon from the west coast making their way to astronauts. This initiative highlights the diversity and quality of Canadian food products on an international stage.
