In celebration of the 10th season of “The Great Canadian Baking Show,” contestants were challenged to reimagine the inaugural Technical Bake from Season 1 – a Battenberg cake, renowned for its iconic checkered design, marzipan coating, and jam layer.

Adding a twist to tradition, this rendition infuses chai spices like cinnamon, cardamom, and cloves, alongside the classic flavors of chocolate and coffee. Notably, all elements, including the mango jam, can be prepared in advance to streamline the assembly process.

Angie showcased the Chocolate-chai Battenberg cake as her Signature Bake during Cake Week in Season 10 of “The Great Canadian Baking Show.”

The recipe, featuring a three-by-three checkered pattern cake, was crafted by Angie Kealey and comprises various elements like the cake, mango jam, and chocolate marzipan. For decoration, white fondant flowers, green fondant leaves, and edible lustre dust are recommended.

To prepare the cake, the dry ingredients are mixed with a warm butter-milk blend, while eggs and sugar are whipped to a light consistency. Two batter variations are created – one with chai spice mix and the other with a chocolate-coffee blend. After baking, the cakes are cooled and cut into strips for assembly.

The mango jam is cooked until thickened, while the chocolate marzipan is processed and kneaded to the desired consistency. The assembly involves layering the cake strips with jam, creating a checkerboard pattern, and covering it with marzipan. Additional marzipan decorations are added before serving.

This detailed process results in a visually stunning and flavorful Chocolate-chai Battenberg cake, perfect for special occasions.
